Baked Peanut Butter Blended Oats

- Makes 2 servings
Ingredients:
- 1 cup old-fashioned oats
- 1 banana
- 1 egg
- ½ cup almond milk
- 1 tablespoon maple syrup or honey
- ½ teaspoon baking powder
- 2 tablespoons PB2 Natural Creamy Peanut Butter Spread (melted)
- ¼ cup chocolate chips
Instructions:
- Preheat oven to 350F. Grease two 8 oz ramekins with cooking spray.
- Add the oats to a blender and pulse until finely ground.
- Add the banana, egg, milk, maple syrup and baking powder to the blender. Blend on high for one minute or until all the ingredients are fully combined and smooth.
- Divide the ingredients evenly between the two ramekins. Sprinkle on the chocolate chips.
- Bake in the center of the preheated oven for 20 minutes or until the mixture has risen and is springy to the touch.
- Drizzle the peanut butter over the warm baked oats. Serve immediately.
