Baked Peanut Butter Blended Oats

  • Makes 2 servings

Ingredients:

  • 1 cup old-fashioned oats
  • 1 banana
  • 1 egg
  • ½ cup almond milk
  • 1 tablespoon maple syrup or honey
  • ½ teaspoon baking powder
  • 2 tablespoons PB2 Natural Creamy Peanut Butter Spread (melted)
  • ¼ cup chocolate chips

Instructions:

  1. Preheat oven to 350F. Grease two 8 oz ramekins with cooking spray.
  2. Add the oats to a blender and pulse until finely ground.
  3. Add the banana, egg, milk, maple syrup and baking powder to the blender. Blend on high for one minute or until all the ingredients are fully combined and smooth.
  4. Divide the ingredients evenly between the two ramekins. Sprinkle on the chocolate chips.
  5. Bake in the center of the preheated oven for 20 minutes or until the mixture has risen and is springy to the touch.
  6. Drizzle the peanut butter over the warm baked oats. Serve immediately.
